KALTBACH™ Cave-aged Cheese

Aged to perfection in a natural sandstone cave.

The Kaltbach™ caves lie on the edge of the idyllic Wauwiller Moor, in the canton of Lucerne. In the past, local farmers stored their produce and equipment in the region’s caves. Today, the extensive subterranean maze of tunnel is used to mature premium cheese.

 

Only the best cheeses are selected for the Kaltbach™ Caves, arriving at the caves at around three months of age and spending another nine months in the sandstone caves’ unique conditions. Emmi’s master cheesemakers devote a great deal of time to cure the cheese to perfection.
